Creamy Garlic Chicken and Rice


  • 2 tsp olive oil
  • 4 small boneless skinless chicken breast halves
  • 1/4 cup fat free miracle whip dressing or fat free mayo
  • 2 cups frozen stir fry vegetables
  • 1 tablespoon soy sauce low sodium
  • 4 cloves garlic
  • 3 cups hot cooked brown rice


  • Heat oil in large nonstick skillet on medium-high heat. Add chicken; cook 6 minutes, turning after 3 minutes
  • Add dressing, vegetables, soy sauce and garlic; stir.
  • Cook covered, 7 minutes or until chicken is cooked through, stirring occasionally.
  • Serve over the hot cooked brown rice
