Amazing Veggie Burger
Funny Story about the recipe : My whole family loves these! This recipe makes about 12 burgers (freeze some!). Feel free to add more spices or jalapeno peppers to jazz them up!
Ingredients
- 2 tbsp EVOO
- 2/3 cup uncooked brown rice
- 1 1/4 cup dried lentils
- 1/4 cup chopped onion
- 3 cups water
- 1/2 tsp salt
- 1 egg or flax egg
- 1 1/4 cup breadcrumbs
- 3/4 cup Parmesan cheese
- 1 tsp dried basil
- 1/2 tsp minced garlic
Instructions
- Heat 1 Tbsp EVOO in a large sauce pan. Add the onion and rice and stir until golden brown.
- Add lentils, water & salt and bring to a boil.
- Reduce heat, cover, and cook until all the water is absorbed – approx 40 min.
- Add additional water if needed, it should be thick.
- Remove from heat and let it cool.
- Add lentils & rice to a food processor. Add egg, breadcrumbs, basil, cheese & garlic. Process until well combined & the texture of ground beef.
- Form into patties, about 1/2" thick.
- Heat remaining Tbsp EVOO in a large skillet.
- Cook patties in batches; drain on paper towels.
- Serve on a whole wheat bun with all the fixin's or put them in an airtight container in the fridge. They also freeze really well!
