Amazing Veggie Burger

Funny Story about the recipe : My whole family loves these! This recipe makes about 12 burgers (freeze some!). Feel free to add more spices or jalapeno peppers to jazz them up!

Ingredients

  • 2 tbsp EVOO
  • 2/3 cup uncooked brown rice
  • 1 1/4 cup dried lentils
  • 1/4 cup chopped onion
  • 3 cups water
  • 1/2 tsp salt
  • 1 egg or flax egg
  • 1 1/4 cup breadcrumbs
  • 3/4 cup Parmesan cheese
  • 1 tsp dried basil
  • 1/2 tsp minced garlic

Instructions

  • Heat 1 Tbsp EVOO in a large sauce pan. Add the onion and rice and stir until golden brown.
  • Add lentils, water & salt and bring to a boil.
  • Reduce heat, cover, and cook until all the water is absorbed – approx 40 min.
  • Add additional water if needed, it should be thick.
  • Remove from heat and let it cool.
  • Add lentils & rice to a food processor. Add egg, breadcrumbs, basil, cheese & garlic. Process until well combined & the texture of ground beef.
  • Form into patties, about 1/2" thick.
  • Heat remaining Tbsp EVOO in a large skillet.
  • Cook patties in batches; drain on paper towels.
  • Serve on a whole wheat bun with all the fixin's or put them in an airtight container in the fridge. They also freeze really well!
